Our grapes are meticulously hand-picked and selected, with each batch placed in 20 kg crates for further quality control. The wine is crafted using traditional methods, with light extraction and extended maceration and fermentation times. Aging takes place in new French Oak barrels, with various debourbages to achieve optimal clarity. JOTA de Tōro Reserva is clarified with vegetable protein, allergen-free, and slightly stabilized by cold, ensuring it does not fall below 0ºC during the process.

Aging: JOTA de Tōro Reserva matures gracefully for an impressive 16 to 24 months in new medium-toasted French Oak barrels. This extended aging period allows the wine to reach its full potential, creating a masterpiece of flavor and complexity.
