Serving temperature: Serve between 16º to 18º.
Tasting notes: High layer, cherry red with garnet edges. Notes of black fruits, blueberries and prunes, with an expression of ripe grapes, structured and with notes of well-integrated toasted wood, such as cocoa and coffee, but retaining freshness. Structured and weighty in the mouth, very round, with ripe and fleshy tannins, intense, complex, and elegant.
Cultivation: Integrated agriculture that respects the environment. Family rainfed strains, in traditional vases, aged between 50 and 80 years, with sandy soils and pebbles, low yield 4000 – 4500 kg per hectare. Manual harvest.
Preparation: Traditional, selection and destemming, light crushing, maceration, and fermentation in stainless steel tanks, pumping over and aging in French and American oak barrels with several rackings. Clarified with vegetable protein, free of allergens, slightly stabilized by cold, not falling below 0ºC, bottled and kept in the bottle before going on the market.
Aging: Minimum of 9 months in medium-toasted Spanish (Qercus pyrenaica), French and American oak.
Gastronomy: Suitable for hearty meat dishes, roasted or grilled meats, stews, game dishes, cured cheeses, and Iberian sausages.
