The Extra Virgin Olive Oil has been refined in Amontillado de Jerez wine barrels with more than half a century of age.

Castillo de Canena Amontillado is the result of the passion for two gastronomic products as outstanding as the Castillo de Canena oil and the fortified wines of Jerez. The freshness of our oil acquires the solera of the fortified wine by refining it in the Jerez cask of Amontillado.

The fascinating aromatic profile of the amontillado, with its inexhaustible waves of dried fruit and saline nuances, is gently led by the delicacy of the oil that fixes them on our palate.
